Roasted Tomato Soup

Ingredients
  • 2 tomatoesmedium
  • 1/2 onion
  • 4 cloves of garlic[peeled]
  • 2tsp oreganodried
  • 1teaspoon salt
  • 1/2tsp black pepper
  • 3tbsp cheddar cheeseshredded
  • 2tbsp olive oil
Instructions
  1. Coarsely chop tomatoes and onion.
  2. In an oven-proof dish keep the onions, tomatoes, garlic cloves, dried oregano and pepper powder. Sprinkle 2 tablespoons of olive oil.
  3. Keep in oven at 450 F for 45 minutes.
  4. Let cool and make a puree of the mixture along with shredded cheese.
  5. Add salt and 3 cups of water to puree.
  6. Boil and serve.
