Pre-heat oven to 375 F.
In a large mixing bowl blend together the flour, baking soda and salt.
In another large mixing bowl cream together the butter and peanut butter - add sugar and mix well.
Add egg and vanilla to the butter/peanut butter mixture and mix until fluffy.
From dough into 1 inch balls, roll in granulated sugar, and place on a greased cookie sheet. Gently press each one down in a criss-cross pattern with the tines of a dinner fork.
Bake about 10 minutes at 375 F.
Makes abiut 24 cookies.
